Saba Dressing otherwise known in Italy
as Mosto d’uva cotto is the product of an
ancient craft of cooking fresh grape juice.
It is a delightful substitute for white sugar
and can be used to prepare sweets,
panna cotta, ice creams & yoghurt or try
using with vegetables, white meats or
cheese. Like many good balsamic
vinegars, the juice is made in Modena,
Italy, and cooked to concentrate the
flavour. Unlike balsamic vinegar, it is not
fermented. On its own, the juice is thick,
rich and grapey, not too sweet. But it is
also a fine addition to dessert sauces and
compotes, and an admirable non-alcoholic
substitute for wine in dishes of cooked
meats.
